We don't have any eggs

Thank you everyone who left birthday wishes in the comments - I am still working on the swing. The shoes, now the shoes I could totally do.

Lately I rather feel like I am struck by lightning than by knitting, there's not much going on with the sticks and string.

For your entertainment and tastebuds:

Quick and dirty Tarte Flambée, also called Flammekueche

Warning! this is neither kosher, vegan nor low fat. For the calorie counters out there, one of these babies has about 320 calories when you use Sour Cream.

You need Tortillas - as many as you want

For each Tortilla you need

- 1 slice Bacon, cut into fine strips
- 1/2 tablespoon finely chopped Onions
- 1 tablespoon Sour cream (or even Crème Fraîche)
some pepper and salt (optional)

I have seen recipes online that use yeast dough. I have to disagree with these because where we used to eat our Flammkuchen it was prepared with a very simple dough made of water, flour and some salt. No rising agent. So Tortillas seemed to be a good solution, uncooked ones would be perfect.

Place Tortilla on baking pan.



Spread with Sour Cream.



Distribute bacon and onion. Sprinkle with pepper and salt if so wanted.



Bake at 350°F (180°C) for 10 to 15 minutes or until turning lightly brown at the edges.

Serve. As I said, quick, dirty and delicious.

This is where we used to get our fix. If you are ever in the area, go. And don't forget to have a Schnaps after you're done eating - you'll need it.
